Apricot-Coconut Granola Bars

Yields one 8×8 pan – Recipe adapted from Joy the Baker

1 1/2 cups old fashioned oats

1/2 cup oat flour (put oats in food processor and pulse until coarse)

1/2 cup light brown sugar

2 Tbsp. ground flaxseed

1/2 tsp. salt

1/2 tsp. cinnamon

1 cup shredded, sweetened coconut

3/4 cup dried apricots, chopped

1/2 cup almonds

1/4 cup honey

2 Tbsp. maple syrup

1/4 cup melted butter

1/2 tsp. vanilla extract

Preheat oven to 350 degrees F. Spray 8″ square baking dish with cooking spray and line with parchment paper, letting a bit hang over the edge.

In a large bowl, combine oats, oat flour, brown sugar, flaxseed, salt, cinnamon, coconut, apricots and almonds. Stir.

In a separate small bowl, whisk together honey, maple syrup, butter and vanilla. Pour over mixture and stir until all ingredients are moistened.

Pour into prepared dish and use a rubber spatula to firmly pack the mixture into the dish. Bake for about 35 minutes. Granola will harden once it cools and do not remove from dish until it does.

Cool for 30 minutes and place in refrigerator just before slicing, to prevent crumbling. Store in an airtight container for up to one week.
