(Yields: 2 bowls – Time: 5 minutes)
1 cup almond milk
1/2 cup old fashioned oats
pinch of salt
1 small sweet potato, baked (or 1/2 cup sweet potato puree)
1/4 cup chopped pecans
4 Tbs. brown sugar
In a small saucepan, boil milk, salt and oats over medium-high heat for 3 minutes, stirring frequently. Remove from heat and stir in sweet potato and brown sugar. Top with chopped pecans and enjoy, ya’ll.
